Big Dick’s Apricot Pork Chops

Yields: 4 servings

Ingredients:
- 2 tablespoons vegetable oil
- 4 (4 ounce) pork chops
- 3/4 cup apricot jam
- 1-1/2 teaspoon Big Dick’s Dry Rub
Directions:
- Heat oil in a large skillet over medium-high heat. Brown the chops in the hot skillet, turning once.
- In a measuring cup, mix together apricot jam and Big Dick’s Dry Rub. Pour over chops, and reduce heat to medium-low. Simmer uncovered for 20 minutes, or until meat is done.
