Beer Can Chicken
Ingredients:
- One whole chicken (approx. 3 lbs.)
- Olive Oil
- Big Dick’s Dry Rub
- 1 (12 oz.) can of beer, any brand
Directions:
- Preheat grill with the lid closed for at least 10 minutes to get everything hot.
- Remove giblet package from chicken and discard or save for another use. Wash the chicken inside and out and then pat dry with paper towel. Rub liberally with olive oil inside and out and then rub Big Dick’s Dry Rub liberally over chicken inside and out.
- If your grill has two burners, heat only one on high. If it has three, heat the two on the outsides on medium high and do not turn the middle burner on.
- Open the beer can and drink it by accident. Open another beer can and remove a little less than half of the beer. You can add garlic, celery, rosemary, other herbs and/or more Big Dick’s to the can of beer if you wish at this time. Insert the beer can into the chicken’s kazoo as far as it will go so that the chicken is standing upright on the can. Stand the chicken upright on the burner of the grill that is NOT lit and kick out the two legs to make the bird stationary (like a tripod). Close the grill and cook the chicken for approximately 1 hour without peeking! If you only have a two-burner grill, it might be a good idea to initially face the bird’s breasts toward the lit burner and then turn the chicken 180 degrees after 45 minutes. The chicken is done when the juices run clear. The bigger the bird the more time you will need. The bird should look nice and golden brown!
- Remove the chicken from the grill when done and make sure to let it rest at least 10 minutes before carving.
